Artichoke hearts w/ gluten-free flour & garlic powder browned in coconut oil

Posted on April 13th, 2011 by rawfusionliving.

Was definitely up for a Raw Fusion dinner so here's what I came up with: Dusted canned artichoke hearts with gluten free flour and garlic powder and browned in coconut oil. I very briefly sauteed the asparagus and placed all on a bed of gorgeous green lettuce. A spritz of lemon and some nutritional yeast - no dressing needed on THIS salad... :-)

Here's a raw fusion recipe from the blog of my favorite coconut oil - Kelapo -it's fair trade and quite wonderful. http://coconutoilcooking.com/coconut-oil-blog-posts/raw-fusion-asian-sti...

If anyone is coming to the Sweetwater Raw Festival this weekend, we can definitely use an assistant. Please let me know if you would like to help. Thanks!

If you get the Daytime show - I will be on tomorrow doing a segment on "Trustables" a raw fusion PB & J alternative. NBC 10 am here in Central Florida.

Mango Mexicano for breakfast - chunks of fresh mango with slices of celery - a nice spritz of lime juice and a sprinkle of chili powder.

Heading out on a Wild Edibles walkabout to learn about weeds we can (and should!) eat. Hope to get a photo or two to share.
