This recipe, adapted from a recipe by Rebecca Carlson at 123raw.com, walks you through all the steps to create a completely raw and totally tasty spring roll, with two delicious dipping sauces!

Sweet And Savory Sesame

Ingredients: 2 tbs. raw tahini, 1/4 cup olive oil, 1/2 cup water, 1 tbs. miso, 1 garlic clove, 5 pitted dates, 1/2 lemon, 1/4 tsp. cayenne or chili powder (optional)

Options: Replace tahini with 3 tbs. sesame seeds. Miso can be replaced with Tamari or Nama Shoyu sauce. For dipping sauce decrease amount of water -- dressing will also thicken with 2 hrs. refrigeration.

Directions: Place all ingredients in Vitamix or blender; Blend until smooth, adding more water if needed. Add spices after tasting.

Mango Dijon

Ingredients: 1 lg. ripe mango, 3/4 cup water, 1 tsp. mustard powder, garlic clove, 1 tsp. celtic sea salt

Options: You can replace with 3/4 cup of defrosted frozen mango chunks – OR – soak 1 cup dried (unsweetened) mango in water and use BOTH mango and water in recipe.

Directions: Place all ingredients in Vitamix or blender; Blend until smooth, adding more water if needed. Add more salted if needed.
