
THESE TASTE LIKE FRENCH-FRIED ONIONS.
Ingredients:
- 4 large sweet onions (these are yellow but labeled as "sweet"
- 1/3 cup olive oil
- 1/3 cup tamari or nama shoyu (soy sauce)
- 2/3 cup golden flax seeds - ground (use dedicated coffee grinder or dry container for Vitamix)
- 2/3 cup raw sunflower seeds - ground
Directions:
Peel and cut onions and run through slicing/grating disc on food processor. Place in bowl, liquid and all, with ground flax and sunflower seeds and mix well. Pour in the soy sauce and oil and blend. Let sit for about 15 minutes to absorb the flavors.
You will need 4 dehydrating trays (Excalibur size) with mesh screens - Place a non-stick (Teflex) sheet on top of each. Divide the batter between the 4 trays and smooth out as far as you can to corners without leaving gaps in the batter. Using a spatula, square off the corners.
Dehydrate for 1.5 hours at 145 degrees - then score into the size pieces you desire using the flat side of the spatula. Lower temp to 115 degrees and continue drying for about 5-6 more hours - then turn crackers over onto mesh screens.
You can dry until flexible if you want them for wraps - maybe 4 more hours but if you like them crispy (like we do) dry for at least a day. It's worth it!
When they are dry and crisp - turn off dehydrator for 2 hours to let the internal moisture rise to the surface. Then dry 2 more hours.
